Er arbeitet nur mit lokalen Zutaten die h\u00f6chstens 1 Stunde von seinem Restaurant Mugaritz entfernt liegen und somit sofort und frisch verarbeitet werden. Die K\u00fcche ist in zwei Bereiche unterteilt. Im unteren Bereich werden bei idealer Temperatur die jeweiligen Zutaten zugeschnitten; im oberen Bereich werden sie angeordnet und vom Service anschlie\u00dfend serviert. Es gibt nur ein Men\u00fc. Dieses wird nur aus saisonalen Zutaten komponiert. Wie bei gro\u00dfen Weinen muss man bei dieser K\u00fcche erst zweimal hin schmecken, um diese auch nur im Ansatz begreifen zu k\u00f6nnen. Sie ist reduziert, k\u00fchl, nicht s\u00fc\u00df oder Effekt schreiend, sondern fordernd und nachhaltig. Die Gerichte sind brillant auf ihren jeweiligen Charakter abgestimmt und bauen neue Geschmacksdimensionen auf.
