Zutaten: 2 mittelgro\u00dfe Kartoffeln, 2 Eier, 3 St\u00fcck Pimiento del Piquillo, eine gro\u00dfe Zwiebel, eine Knoblauchzehe, Oliven\u00f6l, frisches Wei\u00dfbrot, Salz und Pfeffer. Die Kartoffeln werden fein geraspelt, die beiden Eier in einem kleinem Gef\u00e4\u00df verr\u00fchrt, die Zwiebeln klein geschnitten und sobald alles vorbereitet ist wird eine kleine Pfanne mit Oliven\u00f6l erhitzt. Die ungesch\u00e4lte Knoblauchzehe wird in das siedende Oliven\u00f6l gelegt und dann werden die geraspelten Kartoffeln anger\u00f6stetet. Danach werden die Zwiebeln hinzu gef\u00fcgt und sobald diese glasig sind wird das gequierlte Ei hinzu gegeben. Die vorher in Streifen geschnittenen Pimientos werden dann in das noch leicht fl\u00fcssige Eigelb gelegt. Dann wird die Tortilla noch in der Mitte zusammengefaltet und diese zieht dann bei leicht reduzierter Hitze noch ein paar Minuten nach.
