Meistens ist dies immer ein Gericht oder eine besondere Zutat, welche dann von einem K\u00f6nner oder einer K\u00f6nnerin im Laufe der Jahrzehnte perfektioniert wurde.  <\/p>\n\n\n\n<p>Ob der perfekte Kn\u00f6del auf einer Almh\u00fctte in S\u00fcdtirol, die beste Fischsuppe in einem Hafenrestaurant am Meer oder eben die beste Tortilla, die man sich \u00fcberhaupt vorstellen kann! F\u00fcr dieses traditionelle spanische Gericht gilt I\u00f1aki Guetaria aus Donostia-San Sebasti\u00e1n als wahrer Meister seines Faches. Seine Bar Resaca ist zurecht auch f\u00fcr beste Gin Tonics ber\u00fchmt, seine Tortilla steht dem aber in nichts nach. Das gute St\u00fcck muss mindestens einen Tag vorbestellt werden und auch dann muss der Experte ein wenig \u00fcberredet werden, damit er die Tortilla \u00fcberhaupt zubereitet. In seiner kleinen Komb\u00fcse h\u00e4uft er dann Kartoffeln, Zwiebeln und gr\u00fcnen Paprika in einer Pfanne an, um diese dann nach seinem speziellen Rezept zu w\u00fcrzen und mit gequirlten Eiern zur festlichen Tortilla zu formen.  <\/p>\n\n\n\n<p>Das Ergebnis kann sich sehen und vor allen Dingen schmecken lassen. Die Kartoffeln sind dabei grandios ged\u00fcnstet, die Zwiebeln geben die S\u00fc\u00dfe hinzu, die gr\u00fcne Paprika die besondere Note, die mit ein wenig Cayenne Pfeffer auf den Punkt unterst\u00fctzt wird. Auch die Mundhaptik spielt in allen Aggregatzust\u00e4nden grandios mit.  <\/p>\n\n\n\n<p>Ein stolzes L\u00e4cheln huscht I\u00f1aki beim servieren der Tortilla \u00fcber das Gesicht. Man sp\u00fcrt seinen Stolz und kann selber nur staunen, wie er es geschafft hat, dieses kleine kulinarische Wunderwerk zu erschaffen.
